🧪 Processing Details
This coffee undergoes a unique journey. Carefully selected and washed cherries are depulped, then fermented for 90 hours using a combination of natural enzymes and a sourdough-style yeast starter.
A game-changing, on-farm decaffeination method is applied using ethyl acetate, naturally derived from fermented sugarcane. This solvent, extracted directly at the farm, removes caffeine over a gentle 48-hour period—while preserving the coffee’s vibrant fruit expression and layered complexity.
The decaffeinated coffee is then dried slowly over 8 days, ensuring optimal flavor retention and structure.
