🧪 Processing Details
Freshly harvested cherries are thoroughly washed and only fully ripe red cherries are selected.
The selected cherries undergo anaerobic fermentation for 32 hours in plastic tanks at a controlled temperature of 16–18°C.
After anaerobic fermentation, the cherries are exposed to air (oxidation phase) for 24 hours at 25°C, before depulping.
The depulped beans are then oxidized again for 40 hours, then submerged and fermented for 80 hours in mosto—a liquid byproduct from the previous fermentation stage.
Finally, the beans are dried naturally in a greenhouse at 32°C for approximately 18–20 days.
