Finca Soledad is a farm founded by Pepe Jijon—a journey that reads like an adventure. Originally a mountain explorer, Pepe discovered a new life and put down roots here. Located in the Intag Valley, the farm offers a unique space for cultivating coffee amidst a breathtaking natural environment.

Pepe discovered wild coffee growing on his farm and began pouring his love and passion into coffee cultivation. The farm spans 120 hectares, most of which are protected or reforested woodlands, while only 5 hectares are dedicated to growing diverse coffee varieties such as Typica, Sidra, and Geisha.

 

Finca Soledadは、ペペ・ヒホンによって創設された農園であり、その歩みはまるで冒険のようです。元々は山岳探検家だったペペは、ここで新たな人生を見出し、根を下ろしました。インタッグ・バレーに位置するこの農園は、美しい自然環境の中でコーヒーを栽培する特別な場所となっています。

ペペは自身の農園で自生しているコーヒーを発見し、コーヒーに対する愛情と情熱を注ぎ始めました。農園は120ヘクタールに及び、その大部分は保護された森林または再造林された森林で構成され、わずか5ヘクタールではティピカ、シドラ、ゲイシャなどの多様な品種を栽培しています。

 

 

🌱 Soledad’s Coffee Philosophy: Wave Philosophy

At Finca Soledad, the Wave Philosophy is all about respecting and understanding the language of nature to transform coffee cherries into the finest beans. Pepe applies minimal stress to the embryo of the green beans so that after roasting, their aroma and flavor can truly shine.

The farm carefully controls variables such as environment, temperature, time, and pressure to minimize stress and preserve each coffee’s unique qualities. During the drying process, indirect sunlight is used and moisture activity is regulated over an extended period.

All of these processes go beyond mere production—they are about crafting a natural work of art, where every element (from the expression of the moment, the energy of the pickers, the balance of microorganisms, to the weather) interacts to create a truly distinctive coffee.

 

Finca Soledadのウェーブ・フィロソフィーは、自然の言語を尊重し理解することで、コーヒーチェリーを最高の豆へと変えることを目指しています。ペペは生豆の胚にできるだけ少ないストレスを与え、ロースト後に香りと風味が最大限に引き出されるよう努めています。

農園では、環境、温度、時間、圧力などの要素を調整し、ストレスを最小限に抑えるとともに、各コーヒーの独自の特性を保持しています。乾燥過程では、間接的な日光を利用し、湿度の管理を長期間にわたって行っています。
